Vegan Peanut Butter Chocolate Chip Ice Cream

Ice cream can make a hot sunny day seem a lot less hostile. And just because you’re vegan doesn’t mean you can’t enjoy ice cream! There is an abundance of companies that sell vegan ice creams. However, making your own at home can be healthier and a lot more fun. Here’s a quick recipe for a delicious Peanut Butter Chocolate Chip ice cream.

You’ll Need:
2 bananas
1/4 cup coconut milk
2 tbsp peanut butter
3 tbsp raw cacao nibs
A pinch of salt
1 tsp Agave (optional)

To prepare for this ice cream, you’ll have to slice the bananas and freeze them overnight first. Once you have 2 frozen, sliced bananas, toss the pieces into a food processor or blender and run it till the bananas turn into a paste (don’t blend them too long just yet). Add the rest of the ingredients and blend till you get a soft, ice-cream like consistency.  Thanks to the fact that bananas are used instead of dairy cream, you now have a healthy, nutrient rich ice cream for your dessert. Once you’ve mastered the consistency, you can even add additional ingredients like blueberries, dates, or strawberries, or even some of your favorite nuts for a change of flavor.
