Simple Vegan Breakfast Pancakes

Most people believe that going vegan means giving up your favorite foods. But if you can find the right mix of ingredients, you can recreate a vegan version of almost any dish.

Like pancakes, for instance. And you know the best part of this recipe? These pancakes are gluten-free! This recipe is also free from bananas, and I know that’s probably a major turnoff. But vegans are eating bananas all the time. So it would nice to have a banana-free recipe for a change, don’t you think?

You’ll Need:
½ cup of unsweetened applesauce (this works as the egg)
1 cup of oat flour (grind the oats in a blender or purchase pre-ground)
1 cup of plant milk (coconut is our favorite)
1 tbsp Coconut oil (melted)
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 tbsp lemon juice

Toss the ingredients into a blender (or whisk in a bowl) and blend till everything is combined. Be careful not to make it too fine. Heat a frying pan on low for a minute or two, grease it with your choice of oil and pour a portion of the mixture into the pan. You want to spread the pancake mix evenly, to prevent it from becoming too thick in one place. After about 3 minutes, one side should be cooked. So slide a spatula under, flip it over, and cook the other side for 1-2 minutes. Make as many pancakes as you want to or until you’ve used up all the batter.

And there you have it! 100% vegan pancakes. Serve them up with lots of maple syrup and your choice of fruit & nuts for an added touch.
