Quinoa salad recipe

1 cup Quinoa
1 1/2 cups water
1/2 teaspoon salt
1 cup black beans
1 tomato , sliced
1 cup packed, coarsely chopped spinach
1/2 cup sliced black olives
1 avocado, sliced
1/2 cup thinly sliced bell pepper
1/4 cup thinly sliced red onion

Dressing:
1/4 cup olive oil
2 tablespoons lime juice
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Combine quinoa, water and 1/2 teaspoon salt in medium saucepan. Heat to boiling. Reduce heat and cover. Simmer 12 to 15 minutes until water is absorbed. Remove from heat and let cool.
Whisk together the dressing ingredients in small bowl.
Toss quinoa and the remaining salad ingredients in large bowl.
Add the dressing and toss.
Serve at room temperature or refrigerate until ready to serve.
